While we have no full volumes on the subject matter, in Boletin Ecclesiastico De Filipinas, it was mentioned that the Dominicans founded and/or converted Gattaran in 1623 (please see attached). Further, there are a few sources in Google Books that may provide you with the historical narrative of the parish church. Kindly click the link and browse the pages where the term “Gattaran Church” can be found.
