Hi Gilliam. You may browse the online version of the Philippine Food Composition Table using this link: https://i.fnri.dost.gov.ph/fct/library/show/224. In that link, you can get the nutritional content of the ube in its raw form. However, if you wish to get the nutritional content of the boiled version, you can still check it using the same link. You just have to register and log in if you are a new user of the site. As for the researches done on ube, you may visit our office and check our library for the actual documents, You may also want to check our main website using this link: https://www.fnri.dost.gov.ph/index.php/publications/fnri-seminars-series. This link will provide you a collection of our completed researches every year.
